Spiced Rice with Carrots and Herbs

Carrot Rice
 

Ingredients

1 cup uncooked long grain or Basmati Rice
4 carrots
1 1/2 tsp. salt or as needed
1 clove of garlic, diced
1 tbsp. fresh coriander
1/2 tsp. crushed red pepper or as needed
1/2 tsp. garam masala (found in any Indian store)
1 tbsp. oil (any oil can be used)
1-2 tsp. lemon juice

Carrot Rice is a healthy and satisfying vegetarian dish cooked with carrots and Indian spices. This is a tasty, quick and an easy recipe.

Directions

Cook rice in a rice cooker.
In a pan, pour oil and add the diced garlic.
Wait for a minute and add the grated carrots, cover the pan.
Saute the carrots on medium flame in the covered pan stirring occasionally.
After the carrots are cooked, add the spices, salt and coriander.
Now add the cooked rice to the pan, mixing it evenly with the other ingredients.
Transfer the contents into a serving bowl, add lemon juice as desired.
