Healthy and Tasty Tofu Pancakes with Tuna and Vegetables
A healthy tofu dish that will be loved by everyone for its taste and healthy ingredients.
Ingredients
- 1 block tofu, drained
- 1 can tuna, drained
- 1 carrot (medium-size)
- 1/2 onion (medium-size)
- 1 spring or green onion
- 2 eggs
- 2 tbsp. cornstarch
- 1 tsp. salt
Directions
- Drain and mash the tofu.
- Chop carrot, onion and green onion into small pieces.
- Combine and mix all the ingredients in a large bowl (be careful not to mash tuna too much as that would make the pancake too soft.)
- Cook on oiled frying pan until both sides turn to light brown and serve.
Additional Notes
This is a very easy dish you can make in less than 20 minutes. It can be a healthy snack option for kids (Feel free to add other veggies not included in the ingredient list). If you were looking for a healthy dish with a slight Asian taste, look no further!
You could change up a little bit by adding other vegetables such as broccoli and maybe, even kimchi (if you are up for spicy!). And if you are a meat lover, ham would be a nice addition, giving the pancake more chewy texture.
