Healthy and Tasty Tofu Pancakes with Tuna and Vegetables

A healthy tofu dish that will be loved by everyone for its taste and healthy ingredients.
Ingredients
  • 1 block tofu, drained
  • 1 can tuna, drained
  • 1 carrot (medium-size)
  • 1/2 onion (medium-size)
  • 1 spring or green onion
  • 2 eggs
  • 2 tbsp. cornstarch
  • 1 tsp. salt
Directions
  1. Drain and mash the tofu.
  2. Chop carrot, onion and green onion into small pieces.
  3. Combine and mix all the ingredients in a large bowl (be careful not to mash tuna too much as that would make the pancake too soft.)
  4. Cook on oiled frying pan until both sides turn to light brown and serve.
Additional Notes
This is a very easy dish you can make in less than 20 minutes. It can be a healthy snack option for kids (Feel free to add other veggies not included in the ingredient list). If you were looking for a healthy dish with a slight Asian taste, look no further!

You could change up a little bit by adding other vegetables such as broccoli and maybe, even kimchi (if you are up for spicy!). And if you are a meat lover, ham would be a nice addition, giving the pancake more chewy texture.
