Mini Hamburgers with Pita Bread

Ingredients

2 lbs ground beef
1/2 stick butter or margarine
Salt and pepper
Pita bread
Mini-hamburger buns
Ketchup
Raw onion
Scallions
Pickles
Cheese
Tomato
Lettuce
Mustard
Hummus
Tabouli
Baba Ganoush
French fries

This is a hamburger recipe with a lot of flavor. Best of all, it is different than your every day burger recipe!

Directions

Place the meat in a bowl and salt and pepper to taste.
Mix well.
On medium high heat, melt a tbsp of butter on a large skillet.
Dampen your hands so that the meat will not stick to them.
Remove a small amount of meat, approximately 1/8 cup, from the bowl and flatten to a very thin patty. The patty should not be much larger than 2-3 inches big and 1/4 inch thick.
Don't add the patties to the skillet until you have enough to fill it.
Cook on medium heat, 5 minutes on each side until cooked completely thru. Using the back of a spatula, press down on each patty to keep it thin. Once you turn it over, again press down with the back of a spatula to re-flatten.
Once cooked, remove the patties from the heat and add additional butter to the skillet prior to cooking the second batch of patties.
Continue to make patties and cooking them until all the meat is used up.
Once all the patties are made, serve with your favorite fixings.

Additional Notes

My Syrian husband likes very well done meat that is not too thick. I like thick medium rare meat. So when we first got married, making hamburgers became on of the things to which we both had to adapt. I like thick juicy hamburgers, he likes thin burgers. I like hamburger buns, he likes pita bread. He showed me how to make these hamburgers, so that now, I can satisfy both of us. My kids like these mini-hamburgers because they can dip them in ketchup and eat with their hands. Or we can find mini-buns and have mini-burgers. Since you don't do much to the meat before cooking, preparation time is minimal so this is also a really quick meal to make. Anyway you serve these, they are fun to eat.
