Crunchy Greek Cabbage and Carrot Salad
A variation on Greek cabbage salad, or Lahanosalata. This is typically eaten as part of an assortment of starters, or mezes.
Directions
Finely shred the cabbage and carrot.
Place in a bowl with the onion and mix well using your hands.
Add the lemon juice, olive oil to the salad.
Season with the salt and pepper and mix again.
Taste to check seasoning and supplement with more lemon, olive oil, salt or pepper as required.
Serve with a garnish of parsley, if desired.
Additional Notes
The trick to great tasting cabbage and carrot salad is the dressing and plenty of it. Keep tasting and adding dressing ingredients until it is just right.
