Gluten Free Corn and Crab Dressing
Ingredients
2 cups favorite gluten-free (GF) bread crumbs
1/2 cup canned whole kernel corn
1/2 cup cooked crab meat crumbled
1 hardboiled egg white
1 large yellow onion, chopped
1/2 stalk celery, chopped
1/2 tsp "pepperman" spice (red and black pepper mix)
1/2 tsp nutmeg
1/4 tsp sea salt, table salt or salt substitute
2 cups vegetable or seafood cooking stock
A beautiful rendition of traditional dressing made with gluten-free bread crumbs, corn, crab, celery, onions, egg whites and spices. Enjoy!!
Directions
Preheat oven to 350 F
Crumble gluten-free bread crumbs in large casserole dish
Blend corn and crabmeat into bread crumbs
Blend chopped onion and celery into gluten-free breadcrumbs
Sprinkle Pepperman spice, nutmeg and salt into mixture
Stir together all ingredients in casserole dish
Add vegetable or seafood cooking stock
Cover with loose tin foil
Bake in oven for 40-45 minutes
Remove foil and bake additional 15 minutes to brown
Serve warm
Additional Notes
Always check packaged crumbled crab for shells before cooking, and remove them if necessary. Even though they should be pre-cleaned, there is a chance a shell or two may have been missed in the cleaning process.
