Heidemarie's Homemade Ginger Cookies

Ginger biscuits
Crunchy, spicy ginger biscuits to enjoy all year round.
Ingredients
  • 40 oz. cake flour
  • 35 oz. brown sugar
  • 1/4 tsp. salt
  • 2 1/2 tsp. baking soda
  • 5 heaping tsp. ground ginger
  • 7 oz. lard
  • 4 1/2 oz. butter
  • 9 oz. golden syrup (if unavailable, substitute honey or corn syrup)
  • 6 oz. molasses
  • 5 small eggs
Directions
  1. Preheat oven to 360 F.
  2. Place the butter, lard, molasses and syrup into a pan, and melt on stovetop over moderate heat. Allow to cool.
  3. In the meantime mix all the dry ingredients.
  4. Beat the eggs.
  5. Mix the Syrup mixture, the eggs and the dry ingredients together, and knead well.
  6. Roll walnut sizes balls and place on a well greased baking sheet, flattening the balls with the palm of your hand.
  7. Bake in oven for 10-15 minutes, until nicely browned.
  8. Lift off the baking sheet carefully, and allow to cool on a wire rack.
Additional Notes
If you prefer a less rich biscuit, replace 1 cup of molasses with 1 cup of syrup.

Golden Syrup is available in the USA as Kings Syrup. If you cannot find this, you can substitute the golden syrup with honey or corn syrup.
