Potato and Vegetable Fritatta
 

Ingredients

8 eggs
1 red bell pepper chopped
1/4 cup chopped onions
1 clove garlic finely chopped
One zucchini cleaned, sliced long and thin
1/4 tsp black pepper
One diced fresh tomato
3 medium potatoes cleaned, peeled, and sliced very thinly
1 lb bacon broiled, crisp, drain
1 cup parmesan cheese
1 cup mozzarella cheese
1/8 cup Michigan cherry wine
1/8 tsp chives

Great for a mind free breakfast, this recipe will start your day off right!

Directions

In a skillet, heat and do not brown,chives potatoes, the onion, garlic, pepper, tomatoes, zucchini until crisp tender
In pie plate or small baking dish, line the pan with the cooked bacon
Beat four eggs with the wine and pour over the bacon
Layer the ingredients from the skillet evenly adding parmesan cheese and 1/2 of the mozzarella cheese
Beat and add the remaining four eggs
Sprinkle the top with the rest of the two cheeses
Place the pan on a cookie sheet to catch any eggs that may cook out of the pan
Place a small amount of chopped tomatoes on the top and serve with toast
Bake at 350 degrees for 30 minutes

Additional Notes

May want to add the eggs to the frying pan to firm them before baking, but this step can be eliminated if you choose.
