Greek Island Fries

Ingredients

2 large potatoes, cut into large chips
2 tbsp. olive oil
1 tsp. dried rigani or oregano
1 tsp. salt
1 tsp. fresh ground pepper

This is the Greek version of home-made oven fried potatoes.

Directions

Parboil potatoes for 5 minutes.
Drain well.
Preheat the oven to its maximum temperature.
Quickly sauté the chips in the hot oil adding half the rigani, salt and pepper.
Spread the chips over a metallic roasting dish and sprinkle with the remainder of the rigani, salt and pepper.
Transfer to the hot oven for 10-15 minutes, until chips are soft and golden.
Serve garnished with additional rigani/oregano.

Additional Notes

This recipe uses the traditional Greek herb, rigani, but equally you could experiment with rosemary, thyme, paprika, chili powder, or a combination of seasonings.
