Tasty Yet Traditional Chicken Fried Rice

Ingredients

3/4 cup egg substitute
3 tbsp nonfat chicken broth, divided
2 cups chopped onions
1 red bell pepper, thinly sliced
1/3 cup low-sodium soy sauce
2 tbsp. oyster sauce
1/2 tsp. garlic powder
1/2 tsp. ground ginger
1/2 tsp. red pepper flakes
4 cups cooked rice
4 green onions, trimmed and sliced
1 cup frozen peas, thawed
6-oz can sliced water chestnuts, drained
4 cups diced, cooked chicken breast cuts or tenders

Here is a traditional chicken fried rice recipe that is easy to make, tastes great, and will have you hooked on Chinese food!

Directions

Spray large nonstick skillet or wok with cooking spray and heat over medium-high heat.
Add egg substitute; cook without stirring for 2 minutes, until flat omelet forms.
Remove to large plate and cut into 1/2 inch wide strips.
Wipe out skillet.
Add 2 tablespoons chicken broth and heat over high heat.
Add onions and bell pepper; cook 5 to 8 minutes, until tender.
Add soy sauce, oyster sauce, garlic powder, ginger, pepper flakes, and cooked rice; stir-fry 3 minutes.
Stir in remaining chicken broth, green onions, peas, water chestnuts, chicken, and egg strips.
Heat over medium heat, stirring frequently, about 2 minutes.
