Crumbed Fried Chicken Fillets and Cheese Sauce

Crumbed Chicken Fillets
 

Ingredients

(Fillets)
4-6 chicken breast fillets
1 egg
2 tbsp. milk
6 tbsp. all-purpose flour
6 tbsp. corn flakes, crushed
1 tsp. salt
1 tsp. paprika
1 tsp. mixed herbs (use your favorite blend, eg.: oregano, thyme and sweet basil; or parsley, garlic and lemon zest)
1/4 tsp. curry powder (optional - for extra zing)
1 pinch garlic powder
(Cheese Sauce)
1 cup milk
2 oz. butter
1/2 cup grated cheese
2 tbsp. flour
1 clove garlic
1 dash cayenne pepper
1 dash paprika
salt and pepper

A delicious fried chicken breast recipe. Serve it hot with rice and vegetables or salad. Served it cold, with potato salad or traditional salad.

Directions

(Fillets)
Beat together the egg and milk.
Place all the dry ingredients in a plastic zip-lock bag.
Give the bag a good shake.
Roll the chicken breasts in the egg and milk mix, then place in the zip-lock bag, and shake well to coat.
After coating all the fillets in crumbs, allow to stand in the fridge for at least 30 minutes.
Drain the fillets on paper towels.
Deep fry in oil for 5 minutes, until golden brown.
(Cheese Sauce)
Melt the butter in a separate pan.
Finely chop the garlic and add it to the butter.
Add the other spices to the butter. Add the flour and stir well.
Slowly add the milk. mix well, and bring to the boil.
Simmer over low heat until the sauce thickens.
Add the cheese, and stir until the cheese melts.
Pour the cheese sauce over the fillets and serve hot.

Additional Notes

Skip the cheese sauce for a cold dish. For a hot dish, smother the fillet in cheese sauce, served with rice and vegetables.
