Banana-Papaya Stuffed French Toast
Ingredients
1 lg. banana sliced
1 sm. papaya peeled, seeds removed and cubed
3 lg. eggs
1/8 cup whole or fat-free milk
1 tsp. vanilla
4 slices partially thawed brown rice or other gluten-free sandwich style bread
1/2 stick butter or margarine
4 tbsp. cinnamon
4 tbsp. sugar
Favorite breakfast syrup
A delicious gluten-free golden-brown French toast stuffed with a banana-papaya blend then topped with cinnamon, sugar and syrup.
Directions
Peel fruit, cube, slice and set aside.
Blend eggs, milk and vanilla in small mixing bowl.
Break bread slices apart gently.
Melt butter in non-stick skillet on med-high heat (do not allow to brown or burn).
Dip bread slices first into egg mixture then drop into skillet just as butter begins to sizzle.
Skillet fry bread to golden brown, turn over, repeat.
Arrange individual French toast slices on serving dish.
Top two slices with banana-papaya mixture.
Place other two French toast slices on top to make two sandwhiches.
Blend cinnamon and sugar together.
Top French toast with cinnamon, sugar and favorite breakfast syrup.
Serve warm and enjoy.
Additional Notes
We also use Flax seed bread for gluten-free French toast which works out well. However, we definitely prefer the taste and texture of the brown rice bread in this new recipe. Any gluten-free sandwich style bread will most likely work out well though so experiment and enjoy.
