French Floating Island Dessert
Floating Island is a French dessert consisting of soft vanilla custard with floating islands of meringue. It is super easy and super impressive.
Directions
Beat egg whites and a pinch of salt with electric mixer until stiff. Gradually beat in 4 tbsp sugar.
Mix milk with 2 tbsp sugar and vanilla. Bring to a boil.
Spoon egg whites very gently on top of boiling milk. Let boil gently for 3 minutes, turning once to cook meringue, remove with slotted spoon and drain.
Mix yolks with 4 tbsp sugar. Stir in milk and cook over simmering water, stirring constantly, until thickens a little.
Pour custard into serving cups or bowls. Add meringue on top.
Chill before serving.
Additional Notes
This dessert should be served cold, even if it seems to be too long of a time to wait.
Also it is important to not boil the combination of yolks and milk. If custard should start to curdle, remove from heat and beat vigorously until smooth.
