Super Simple Crab Meat Enchiladas
Here's a unique enchilada recipe that you probably haven't tried before. It is easy to make and I know you'll love it!
Directions
Combine skim milk and flour in microwave-safe bowl; microwave on high 1 1/2 to 3 minutes, until mixture thickens and bubbles, stirring mixture every 30 seconds.
Stir in cheese and mix until melted.
Add green chiles and crab meat; mix well.
Spoon equal amount of crab mixture down centers of tortillas; roll tortillas to enclose.
Spray shallow dish with cooking spray; place rolled tortillas, seam side down, in dish.
Cover dish with plastic wrap and vent at one corner; cook on High 2 to 3 minutes, until heated through.
Top enchiladas with salsa, cover, and vent one corner.
Cook on High 30 to 45 seconds, until salsa is hot.
Serve with additional salsa, if desired.
Additional Notes
To prevent your tortillas from getting stale like cardboard, wrap them loosely in wax paper. For every two tortillas, microwave on High for 15 seconds. Serve in a covered container to prevent them from drying out. Soft, heated tortillas every time!
