Eggplant with Cilantro
This is an Indo-Italian fusion entree. Eggplant cooked with cilantro can be served with pasta of any kind although spaghetti or linguine would be ideal.
Directions
Make a thick paste of the cilantro and green peppers using a blender/food processor.
Add salt to this paste.
Cut the eggplant width-wise into circular discs.
Spread the cilantro paste on one side of the eggplant discs.
In a pan pour the oil and add the eggplant discs.
Set flame to medium and cover.
Cook till the eggplant is soft, thinner discs get cooked fast.
Once the eggplant is cooked top it with the grated mozzarella cheese.
Wait til the cheese starts to melt, remove from flame.
Serve hot with the pasta.
