Eggplant Parmesan Sliced Thick
This is a low calorie way to enjoy summer vegetables.
Directions
Wash the eggplants thoroughly
Slice thick
Brown the burger, chopping finely with garlic, Italian seasoning, salt, pepper, rosemary
In a 9x13 baking dish, spread a small amount of spaghetti sauce
Begin layering the cheeses, burger, sauce, and eggplant as you would lasagna
To finish the top, use a portion of the mozzarella and parmesan cheeses to sprinkle the top after adding a final layer of burger and saucecheese
Cover with foil and bake at 350 degrees for one hour
Additional Notes
By using thicker slices, it is easier to serve soft eggplant and maintain the appearance of the dish.
