Artichoke Egg Salad
 

Ingredients

1 8 oz. can marinated artichoke hearts, drained and chopped
1 8 oz. can kernel corn, drained
4 eggs, hard-boiled
1/2 cup oil
2 tbsp. lemon juice, fresh squeezed
2 tbsp. mozzarella, shredded
salt to taste

It is a really taste, simple, easy to make recipe. I tried it just once, but I will definitely make this again.

Directions

Make a mayonnaise by mixing together the egg yolks, salt, lemon juice and oil.
Mince egg whites and combine with artichoke, corn and mozzarella.
Pour homemade mayonnaise over mixture and stir.
Refrigerate for minimum 1/2 hour and serve.
