Eggciting Egg Salad with Apples and Cheese
My Husband and I fell in love with this salad at a youth picnic. It still melts his heart 20 years later!
Ingredients
- 6 eggs, hard-boiled
- 2 apples
- 1 medium onion (optional)
- 5 oz cheese
- 3 gherkins
- 1/2 cup mayonnaise
- salt and pepper
Directions
- Bring 2-4 cups water to boil in a small saucepan. Add a teaspoon salt to help prevent the eggs from cracking. Carefully lift the eggs into the pot, and boil for 8-9 minutes, or until hardboiled.
- Once boiled, remove from heat immediately, and rinse under cold water.
- While you are boiling the eggs, chop the gherkins and onion.
- Peel and core the apples, and chop.
- Finely chop or grate the cheese.
- Allow the eggs to cool under running water.
- Peel and chop, then add them to the chopped ingredients.
- Add a dash of salt and pepper to taste.
- Mix in the mayonnaise.
- Serve on toast, with a bread-roll for a light lunch or snack. Or serve it as a side dish at a picnic or barbeque.
Additional Notes
To add a bit of zing to your salad, add a dash of pepper sauce to the mayonnaise.
