Eggciting Egg Salad with Apples and Cheese

Egg-citing Egg Salad
My Husband and I fell in love with this salad at a youth picnic. It still melts his heart 20 years later!
Ingredients
  • 6 eggs, hard-boiled
  • 2 apples
  • 1 medium onion (optional)
  • 5 oz cheese
  • 3 gherkins
  • 1/2 cup mayonnaise
  • salt and pepper
Directions
  1. Bring 2-4 cups water to boil in a small saucepan. Add a teaspoon salt to help prevent the eggs from cracking. Carefully lift the eggs into the pot, and boil for 8-9 minutes, or until hardboiled.
  2. Once boiled, remove from heat immediately, and rinse under cold water.
  3. While you are boiling the eggs, chop the gherkins and onion.
  4. Peel and core the apples, and chop.
  5. Finely chop or grate the cheese.
  6. Allow the eggs to cool under running water.
  7. Peel and chop, then add them to the chopped ingredients.
  8. Add a dash of salt and pepper to taste.
  9. Mix in the mayonnaise.
  10. Serve on toast, with a bread-roll for a light lunch or snack. Or serve it as a side dish at a picnic or barbeque.
Additional Notes
To add a bit of zing to your salad, add a dash of pepper sauce to the mayonnaise.
Serve as a light meal, or as a side dish at a barbecue or picnic.
