Strawberry Fool

Ingredients

1 pint fresh strawberries, cleaned & hulled
1/2 cup sugar
1 tablespoon fresh lemon juice
1 cup heavy cream
Fresh strawberry slices to garnish

A super simple spin on a classic recipes. Just a light berries and cream dessert that makes a refreshing finish to any summertime meal.

Directions

Combine the berries, sugar and lemon juice in a food processor or blender & puree until the sugar has dissolved completely.
Pass through a fine mesh strainer to remove excess pulp & seeds.
Whip the cream to stiff peaks.
Carefully fold the strawberry syrup into the whipped cream.
Spoon into 4 dishes, garnish with fresh strawberries, and serve immediately, or refrigerate uncovered and serve within 24 hours.
