Chicken Jalfrezi
 

Ingredients

2 tbsp. vegetable oil
1 onion, chopped
2 red chili peppers, deseeded and finely sliced
2 cloves of garlic, roughly chopped
1 tsp. of finely grated fresh ginger
1 tsp. turmeric
1 tbsp. coriander powder
1 tbsp. cumin powder
2 tsp. curry powder
1 cinnamon stick
3-4 chicken thighs, filleted and cut into large pieces
12 oz. can of tomatoes
1 cup of chicken stock, a stock cube is fine for this
1 green bell pepper, cut in to large squares
1 tsp. salt
3 oz. fresh cilantro, roughly chopped

Add some spice to supper-time with this eastern classic.

Directions

Slowly sauté the onion in the vegetable oil for five to ten minutes.
Add chili, garlic and ginger and continue to fry for a 2-3 minutes.
Add spices and stir for one minute, making sure the onions are coated.
Add green pepper, tomatoes and stock.
Cover and cook for 30 minutes until the sauce has reduced.
Remove cinnamon stick. Add salt and chopped fresh cilantro and serve with naan bread and rice.

Additional Notes

For an even fresher taste, toast some cumin and coriander seeds in a dry frying pan and grind in a pestle and mortar before adding to the sauce.
