Spicy Chicken Chili

Ingredients

1 lb boneless, skinless chicken breasts
6 cups water
3 3/4 cups nonfat chicken broth
2 (8-oz) cans tomato sauce
1 cup diced onion
1/2 of a 10-oz pkg. (1 cup) frozen corn kernels, thawed and drained
15-oz. can chopped tomatoes, undrained
15-oz. can kidney beans, undrained
1/4 cup diced red bell pepper
1 tbsp canned chopped green chiles
1 tbsp chili powder
1/4 tsp garlic powder
1/2 tsp basil
Grated nonfat cheddar cheese and nonfat sour cream, for garnish (optional)

This is a chili recipe you can prepare with your slow cooker or Crock Pot. It is big on flavor, and will be a big hit at the dinner table.

Directions

Combine chicken, water, broth, tomato sauce, onion, corn, tomatoes, with juice, beans, with juice, bell pepper, chiles, chili powder, garlic powder, and basil in Crock Pot or slow cooker.
For best results, cook on High for 2 hours; turn to Low and cook for 6 hours.
This can also be cooked on Low 8 to 10 hours.
Serve with cheese and sour cream (if using).
