Hearty Healthy Mediterranean Couscous Salad
Ingredients
1 box plain whole wheat couscous
1 medium size cucumber
1/2 cup feta stuffed green olives, sliced in half
1/2 cup cherry tomatoes, seeded and sliced in half
1/4 cup feta cheese
1/4 cup flat leaf parsley
5 leaves fresh basil, julienned
2 shallots, thinly sliced
1 avocado, cubed
1/2 cup toasted pine nuts
1 lemon
balsalmic vinegar
olive oil
chicken stock
This simple Mediterranean salad is delicious and nutritious, using tons of veggies and whole wheat couscous.
Directions
Cook couscous following instructions on box, use chicken stock to cook in, instead of water
Add fluffed couscous to bowl
Add all chopped veggies, nuts and cheese
Serve with balsalmic vinegar and olive oil
