Couscous with Lentils and Raisins

Ingredients

2 cups cooked couscous, hot
1 cup cooked lentils
1/2 cup chopped fresh tomato
2 tbsp. raisins
1 tsp dried mint flakes
Dash black pepper
Dash cayenne pepper
1/4 cup nonfat sour cream (optional)

This is an easy couscous recipe that also incorporates lentils, raisins, and a few other tasty ingredients.

Directions

Preheat toaster oven to 400 F
Spray 1 1/2 quart casserole with cooking spray.
Combine couscous, lentils, tomato, raisins, mint, black pepper, and cayenne pepper and mix well; spoon into casserole.
Cover casserole with foil and bake 20 to 25 minutes, until heated through.
Top with sour cream, if using.
