Double Chocolate Chipotle Cookies

Ingredients

2 cups flour
1/4 cup cocoa powder
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, room temperature (1 1/2 sticks)
1 1/4 cup granulated sugar
1/4 cup corn syrup
1 egg
1-3 chipotle peppers, in adobo (minced)
1 teaspoon vanilla extract
2 cups chocolate chips

The double chocolate cookie grows up and gets a fancy pair of pants.

Directions

Preheat the oven to 375F.
Combine the flour, cocoa, baking powder, baking soda and salt.
In a separate bowl, cream the butter, sugar & syrup.
Beat the egg into the creamed butter. Add the vanilla
Add the dry ingredients to the wet and mix until thoroughly combined. Fold in the chocolate chips.
Drop batter by the tablespoon onto greased cookie sheets, leaving 1-2 inches of space between cookies.
Bake for 10-12 minutes, or until firm at the edges.
Remove to a cooling rack. Serve immediately or place in an airtight container to store.

Additional Notes

Chocolate and chillies go so well together. Double chocolate and smoked chillies pair up even better. The addition of chipotle peppers to this dish turns out a surprisingly addictive result. The spiciness of the chipotle sets off the cool aroma of the chocolate while the smokiness evokes a surprising feeling of comfort. Better yet, this is a recipe that the kids will usually leave alone, so you don’t have to worry about them disappearing before you get the chance to enjoy them.
