Traditional Mexican Chilaquiles
This is a traditional Mexican dish often served for breakfast with beans, eggs or as a side dish with meat during dinner. Similar taste to enchiladas.
Directions
Slice or tear corn tortillas into chip size
Heat oil
Fry tortillas as if you are making tortilla chips
Once they crisp remove and place on paper towels
Remove excess oil from pan
Return to Pan and add the whole can of tomato sauce
Add salt to taste
Heat on med, cook for 5-7 mintues until chips have become semi-tender
Serve with side of chopped lettuce, chopped onion, and sour cream, if desired
Additional Notes
Serve on a plate and top with chopped green onions, lettuce and sour cream of grated cheese of your choice. Can be made in to a casserole by topping with cheese and baking for 10-15 min on a 350 degree oven. Combine with other dishes of your choice.
