Swiss Stuffed Chicken Thighs Wrapped in Bacon

Sumptious chicken thighs wrapped in bacon and filled with swiss
 

Ingredients

8 chicken thighs, deboned
8 slices swiss cheese, sliced in 1 inch pieces
8 basil leaves
8 slices of smoked bacon
1 cup of chicken stock
1/2 glass of white wine
1 tsp. dijon mustard

The contrast between crispy smoked bacon and soft melted swiss cheese makes this recipe a dinner party winner.

Directions

Flatten the chicken thighs slightly to maximize room for the stuffing mixture.
In the centre of each chicken thigh place a strip of swiss and a basil leaf.
Place a slice of bacon under the chicken thigh and roll into a circle and fasten with toothpicks.
Fry each on a high heat, turning occasionally to brown the bacon.
Transfer to a pyrex dish and cook at 360 F for 20 minutes.
To make the sauce remove the juices from the dish, cover the chicken with tin foil and keep warm.
Add wine, chicken stock and mustard and boil to reduce.
Pour a spoonful of the sauce over each chicken thigh and serve.

Additional Notes

Of course, you can use other cheeses if you don't have swiss, but swiss seems to go best with the smoked bacon. You may also add some chopped bacon to the stuffing mixture to enhance the flavor.
