Southwestern Chicken Cooked Slowly
Ingredients
1 1/2 lb boneless, skinless chicken breasts
1 tbsp Mrs. Dash seasoning
15-oz can black beans, rinsed and drained
2 cups Southwest-style salsa (with corn and chiles), divided
17-oz. can corn kernels, drained
1 1/2 cups nonfat shredded cheddar cheese
This is a tasty Crock Pot recipe for all the chicken lovers out there. If you like southwestern style food, even better!
Directions
Season chicken breasts with Mrs. Dash seasoning.
Combine beans, 1 cup salsa, and corn in slow cooker or Crock Pot.
Place chicken on top and pour remaining salsa over chicken.
Cover and cook on High 3 to 4 hours or Low 7 to 8 hours.
Sprinkle cheese over chicken and cook until cheese is melted.
Serve with rice or low-fat flour tortillas.
Additional Notes
Cheese does not hold up over extended periods of cooking; for best results, add cheese near the end of cooking time.
