Stewed Curry Chicken Wings and Vegetables
Ingredients
4 chicken wings (wing and drumsticks separated)
2 large chopped carrots
3 tablespoons of canola oil
1/3 cup of water
4 cups of broccoli (fresh or frozen)
1/2 an onion (finely sliced)
2 teaspoons of garlic
1 teaspoon of black pepper
Salt to taste
1 teaspoon of red curry powder
A little twist on an old favorite, yummy and unique.
Directions
Season chicken wings with 1 teaspoon of garlic, 1 teaspoon of black pepper, and salt to taste.
Pour the canola oil in a pot, set stove to high.
Place the chicken wings in the canola oil, once the oil is relatively hot.
Turn the stove to medium high. Allow the chicken wings to brown for a few minutes on each side. The idea is for the wings to get a little color, but to not be completely done.
Once the wings are a bit brown, add the red curry powder on top. Allow the wings to cook in the oil and red curry powder for a minute. Stir well. Pour the 1/3 cup of water into the pot. Stir contents of the pot and cover with a lid for 15 minutes, or until the chicken is completely done. Be sure to check periodically to make sure the chicken does not burn, if necessary add more water.
Remove the lid and add the carrots, broccoli, and one more teaspoon of garlic powder. Stir the contents to mix them well.
Add the onions. Cover the pot and allow the contents to cook for 5 to 10 minutes more. (If you’re using fresh broccoli five minutes is fine. If it’s frozen, 10 minutes may be better.)
Additional Notes
For those of you that aren’t really meat eaters, but aren’t vegetarians either, this dish is perfect. Normally, I just like the flavor real meat gives to food so I just use the chicken to add flavor and I eat only the vegetables in the dish, but meat eaters, feel free to eat the chicken too!
Some people have mentioned that they can’t really tell when chicken’s done. My mom taught me to pierce the chicken near the bone/joint area to check that it’s cooked thoroughly. I would suggest doing the same. If it bleeds or is still fairly pink, then it needs a longer time to cook.
