German Chicken Soup with Semolina Dumplings
Every family has a favorite comfort dish. This soup is German inspired and the best comfort food for my family.
Directions
Put chicken into a pot with water. Bring to a boil over medium high heat.
Simmer slowly and skim off any scum formed on the surface.
Reduce heat to low. Cover stockpot and simmer 15 minutes.
Add all vegetables and simmer for more 15 minutes, until are tender.
For dumplings separate eggs and beat whites in a bowl until stiff peaks have formed.
Add semolina, salt and pepper. Stir gentle.
Throw out onion and sweet pepper, from the pot.
Spoon the dumplings into the pot and simmer gentle for 3 minutes.
Season with salt and pepper to taste and add chopped parsley before serving.
Additional Notes
If the first dumpling doesn't keep together when you release it in the pot, just add a little more semolina to he mixture.
If the dumplings are not tender after simmering time add 1/2 cup cold water and simmer for another 5 minutes.
Add few drops of lemon juice into every bowl, just before serve to enhance the savor.
