Cheesy Layered Chicken Salad
I made this for many parties and it was always a big hit. You can never make too much because everybody loves it!
Directions
Mix mayonnaise and yogurt to make a dressing.
Arrange shredded carrots as the bottom layer in a glass casserole dish.
Pour 1/3 of the dressing over the layer of carrots.
Spread chopped chicken breast and hard boiled eggs on top as the next layer.
Pour the next 1/3 of the dressing over the chopped chicken and eggs.
Spread the chopped tomatoes and peppers on top as the next layer.
Pour the last 1/3 of the dressing over the tomatoes and peppers.
Arrange a layer of shredded mozzarella on top as the final layer and serve.
Additional Notes
A glass salad dish is a must for a nice full view of the finished result. Feel free to add or remove ingredients to this wonderful recipe, just use your taste and imagination.
