Mushroom Chicken Marsala Over Puff Pastry
Ingredients
1 tbsp. olive oil
2-4 oz. onions, caramelized
8 oz. assorted mushrooms, chopped
1 cup chicken breast, cooked and shredded
1 clove garlic, minced
1/4-1/2 tsp. thyme
salt and pepper to taste
1/2 cup marsala wine
3/4 cup half and half or heavy cream
1/3 cup parmesan cheese
2 puff pastry shells, cooked per directions
I love mushrooms and have been experimenting with them. This chicken marsala dish is a combination of many recipes, and really hit the spot with my family.
Directions
Heat oil in large skillet
Add mushrooms to oil and saute on low heat for about 10 minutes
Add wine and cook until reduced by half
Add chicken, caramelized onions, garlic, and thyme and simmer an additional 5-10 minutes
Add salt and pepper to taste
Stir in cream and heat 10 minutes
Stir in parmesan cheese and heat until cheese is melted
Serve over puff pastry shells
