Monday Chicken
Ingredients
2 lg. chicken breasts
4 tbsp virgin olive oil
1 fennel bulb chopped
2 stalks celery chopped
1 sm. sweet onion chopped
1/2 head of cabbage
4 cups cooked rice
2-3 cups chicken stock
salt/pepper to taste
slivered carrots
Yummy mix of different veggies and chicken, mouth watering goodness
Directions
Saute chick breast in hot olive oil, both sides
Add chopped veggies, toss/stir frequently over hot burner.
When all is browned add chicken broth, turn heat down and simmer 30 minutes
Serve over rice
