Monday Chicken

Yummy mix of different veggies and chicken, mouth watering goodness
Ingredients
  • 2 lg. chicken breasts
  • 4 tbsp virgin olive oil
  • 1 fennel bulb chopped
  • 2 stalks celery chopped
  • 1 sm. sweet onion chopped
  • 1/2 head of cabbage
  • 4 cups cooked rice
  • 2-3 cups chicken stock
  • salt/pepper to taste
  • slivered carrots
Directions
  1. Saute chick breast in hot olive oil, both sides
  2. Add chopped veggies, toss/stir frequently over hot burner.
  3. When all is browned add chicken broth, turn heat down and simmer 30 minutes
  4. Serve over rice
