Monday Chicken

Yummy mix of different veggies and chicken, mouth watering goodness
Ingredients
- 2 lg. chicken breasts
- 4 tbsp virgin olive oil
- 1 fennel bulb chopped
- 2 stalks celery chopped
- 1 sm. sweet onion chopped
- 1/2 head of cabbage
- 4 cups cooked rice
- 2-3 cups chicken stock
- salt/pepper to taste
- slivered carrots
Directions
- Saute chick breast in hot olive oil, both sides
- Add chopped veggies, toss/stir frequently over hot burner.
- When all is browned add chicken broth, turn heat down and simmer 30 minutes
- Serve over rice
