Corn Crusted Parmesan Chicken
This is a crispy crust to coat chicken, pork, or turkey.
Directions
Begin with thawed, preferably thin chicken breast
Use three bowls or pans for dipping the chicken breast
Dip each breast in the flour
Shake off the excess flour, dip into the buttermilk, coating well
Dip into a third pan or bowl containing the crushed corn flakes with parmesan cheese and Italian seasoning added
Place in a frying pan with olive oil and fry on low heat turning frequently until done
If you desire, may bake at 350 degrees until done, turn a few times for even baking
Serve on top of pasta and sauce
