Creamy Cauliflower and Ham Soup
 

Ingredients

2 cups of your favorite seasoned croutons
2 tbsp parmesan cheese
1 head of cauliflower cleans and broken up into small pieces
4 eggs
1/2 cup half and half cream
3 chicken flavored boullion cubes
1 cup water to dissolve and heat the chicken flavored boullion cubes
Salt and pepper to taste
2 cups of finely chopped cooked ham
1/4 cup flour

This soup is deceiving as it is very filling.

Directions

In a large pot cook the cauliflower until crisp tender, place in a blender
In a blender, puree the cauliflower and the water it was cooked in
Replace the cauliflower in the original cooking pot
Beat the eggs and cream and add to the cauliflower
In the sauce pan that contains the chicken broth, add 1/4 cup of flour slowly while stirring to thicken the broth
Once the broth is thickened an smooth, add to the cauliflower
Add the chopped ham
Cook for 15-20 minutes to allow all flavors to marry
Sprinkle the top of each serving with your favorite croutons

Additional Notes

Can serve with bread, biscuits, or dinner rolls. You may also want to use a small amount of Velveeta cheese instead of parmesan cheese for this soup.
