Lamb and Sausage Casserole

This wonderful dish makes lamb not just for Sundays anymore.
Ingredients
- 2-pounds Shoulder Arm Lamb Chops, 3/4-inch thick
- 4 Sweet Italian Sausage links, each cut into four pieces
- 2 Tablespoons Olive oil
- 5 pineapple slices, drained, reserve juice
- 5 medium sweet potatoes, peeled, and sliced into 1/2-inch pieces
- 2 Tablespoons butter
- 1 cup mushroom, cleaned
- 1 1/2 cups of canned whole tomatoes, drained
- Reserved Pineapple juice, plus enough water to make 1 cup liquid
Directions
- Heat skillet with olive oil - brown lamb chops on both sides. Remove chops and brown sausage pieces on all sides, remove and set aside. Pour pineapple juice liquid into skillet and loosen all browning bits.
- Transfer chops to layer bottom of a shallow baking dish.
- Lay a slice of pineapple on each chop.
- Place sweet potatoes, tomatoes, mushrooms, and sausage pieces around lamb chops in baking dish.
- Preheat oven to 350 F
- Dot top of casserole with dot of butter, salt and pepper to taste.
- Pour pan liquids evenly over casserole.
- Cover and bake for 50 to 60 minutes, or until chops and sweet potatoes are tender.
