Gingery Asian Glazed Carrots
Ingredients
6-8 medium carrots, peeled & cut into coins or other desired shape
4 tablespoons butter
1 clove garlic, minced
2 tablespoons honey
1/4 teaspoon orange zest
1 tablespoon fresh orange juice
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon fresh grated ginger
1 tablespoon fresh cilantro, finely chopped
Here's a fun Asian twist on a classic veggie. You'll never look at carrots the same way!
Directions
Place the carrots in a large saucepan, cover with cold water, and cook over medium-high heat until just tender. Drain and set aside.
Melt the butter in a large skillet over medium-low heat. Add the garlic and saute until fragrant, 30 seconds.
Add the honey, orange zest & juice, soy sauce, sugar and ginger, stirring to combine.
Add the carrots and saute slowly until glazed.
Remove from heat, stir in the cilantro, and serve.
Additional Notes
Why has the glazed carrot gone out of style? They’re really not all that hard to make, and as a side dish, they present an exceptionally sophisticated air to a standard American spread. Maybe we need something new, a twist perhaps. Here’s a recipe I used to serve with Asian-style duck breasts, but it goes well with many fusion type dishes.
