Ceasar Salad with Homemade Vegan Dressing
A traditional Caesar style salad with alternative vegan dressing and gluten-free croutons.
Directions
Mix 1/4 cup gluten-free vegan mayo and lime juice in small bowl
Add dried herbs, blend, sit aside
Tear lettuce into desired size pieces in medium sized bowl
Toss mayo and lettuce together until leaves are coated slightly
Add parmesean cheese and toss until blended
Top with gluten-free croutons
Additional Notes
For the dressing, I used a mayo substitute called "Nayonaise," which is pretty popular in both gluten-free and vegan communities and generally available in stores. However, any brand of gluten-free or vegan mayo may be used as desired. To keep this recipe gluten-free avoid any products which include distilled vinegar as an ingredient, other vinegars such as apple cider, rice, white wine and other alternatives are fine.
Gluten-free croutons and other ingredients are usually available at markets such as Whole Foods or local community co-ops. However, if you can not find gluten-free croutons in your area, you may also use any gluten-free bread. Simply remove the crust, toast, cut into cubes and top as directed. For crispier croutons allow bread to dry out in a warm area for a day or two before use. Enjoy!!!!
