Ingredients

1/2 cup egg substitute
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 tsp vanilla extract
1/2 cup low-calorie margarine, melted
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
Powdered sugar (optional)

Here is a basic brownie recipe that is easy to make, and is absolutely delicious.

Directions

Combine egg substitute, sugar, brown sugar, vanilla, margarine, flour, and cocoa powder in a medium bowl; blend with electric mixer until creamy and smooth.
Spray 9-inch pie pan with cooking spray; spread batter in pan and microwave, uncovered on High 6 to 9 minutes.
If microwave does not have a rotating dish, turn brownies ever 2 to 3 minutes.
Let stand 5 minutes to set.
If desired, sprinkle cooled brownies with powdered sugar before slicing.

Additional Notes

You won't even be able to tell they were made in the microwave. This is the way brownies were meant to taste! Do not overbake low-fat baked goods like brownies, muffins, or cakes. Because light versions have less fat than the originals, they might dry out if cooked too long. Set your timer a few minutes earlier than the recipe indicates, and keep a close watch on the dish until it's done.
