Simple Savoury Bread Pudding, American Style
Ingredients
8 cups bread (the heartier the better), cubed or torn
4 eggs
2 cups half and half
1/4 cup sliced scallions (green parts only)
1 cup shredded cheddar or swiss cheese
1 cup shredded cheddar or swiss cheese
1 teaspoon salt
pepper to taste
A little something different to liven up the dinner table!
Directions
Preheat the oven to 350F.
Combine the eggs, milk, salt, pepper and scallions in a bowl. Mix in the bread and toss to combine.
Add in the 3/4 cups of the cheese.
Grease a large baking dish with the butter. Add the bread pudding and spread into an even layer. Top with the remainder of the cheese.
Bake for approximately 1 hour, or until an inserted toothpick comes out clean.
Cool briefly and serve warm.
Additional Notes
Think of this dish as a canvas awaiting a masterpiece. Delicious served on its own, savory bread puddings make a surprising and fulfilling nontraditional side to any meal. However, when augmented with additional ingredients such as sauteed vegetables or my favorite, browned sausage, it can also appear as the star of the show. If you want to make a meal out of this, serve it with a salad.
