Ukrainian Borscht Carey's Way
I tried this at a restaurant and the cook would not give up the recipe so I had to make my own.
Directions
Clean and peel the beets
In a deep and large pot cook the beets thoroughly
Remove the beets and slice them, return to pot
In a separate baking dish, add all other ingredients to the pork loin, except the cabbage
Bake at 350-400 degrees until the meat is tender
Once the meat is done cooking, remove from the broth and other ingredients
Slice the red cabbage and add to the pot
Add the meat
Cook the soup until the cabbage is soft
Add salt and pepper to taste as the soup cooks
Serve in deep soup bowl
Additional Notes
You may want to use Fit to clean the beets to ensure food safety.
Be sure to remove the bay leaf before the final cooking step.
All ingredients will be red, but tasty. The beets will loose some of the red coloring as the soup cooks.
