Russian Borscht with Beef and Veggies
Ingredients
12 cups cold water
2 cups shredded white cabbage
2 finely chopped onions
3 shredded carrots
3 shredded beets
2 chopped celery sticks
1 chopped red bell pepper
1 shredded parsnip
3 potatoes cut in big cubes
5 oz tomato paste
1 lb beef stir fry strips
2 tsp fresh cut curly parsley
1 tsp fresh cut lovage (optional)
4 cups borscht (juice from fermented wheat bran) or 5 oz fresh squeezed lemon juice
salt and pepper to taste
This is a famous Russian recipe that was modified to fit my family’s taste. It can be made with beef or pork fume. It is very tasty and colorful.
Directions
Simmer meat in water for about 30-45 minutes until tender.
Add cabbage, onions, carrots, beets, potatoes, parsnip, celery, and red pepper.
Bring again to a boil over medium high heat.
Reduce heat to low. Cover stockpot and simmer 15 minutes.
Add tomato paste, parsley and lovage, simmer 2 more minutes.
Pour lemon juice or borscht and simmer 2 minutes.
Add salt and pepper to taste.
Additional Notes
Serve in bowl with a tablespoon of sour cream and pickled hot peppers aside.
If you are vegetarian the meat can be successfully substituted with mushrooms.
