Easy Red Bean Soup with Vegetables
Ingredients
4 cups dry red beans
2 cups fusilli pasta
1 onion, chopped
1 yellow bell pepper, chopped
2 carrots, peeled and chopped
1 parsnip, peeled and chopped
10 cups water
1 tbsp olive oil
4 tbsp tomato paste
5 tbsp lemon juice, fresh squeezed
2 tbsp parsley, minced
1 tbsp dill, minced
salt and pepper to taste
This is a simple recipe, yet it is the best red bean soup I've tried. It can be made with just vegetables or add smoked ham for a more savory flavor.
Directions
Soak the beans overnight in a pan of water.
Drain off the soaking water. Boil beans in 8 cups of water changing water with another 8 cups of hot water twice, after every 10 minutes.
Simmer beans about 1 hour or until are soft.
Add onion, bell pepper, carrots, parsnip and simmer for another 15 minutes.
Add pasta and cook for 8 minutes.
Mix tomato paste with lemon juice, salt, pepper, and pour into soup.
Add oil, parsley and dill. Serve hot or cold, however you prefer is good.
Additional Notes
This soup can be made spicy if that is the way you prefer it. It can also be topped with sour cream.
