Kieran's Giant Baked Beans

Ingredients

1 lb. dried butter beans or lima beans
16 oz. can of tomatoes
3 cloves of garlic
1 onion, halved and sliced in rings
1 cup chicken stock
1 tsp. dill, dried or fresh (if available)
salt and pepper
1/2 cup olive oil
parsley to garnish

This is derived from the classic Greek dish, Gigantes. Kids will love this healthy alternative to the canned variety.

Directions

Soak your beans in water overnight.
Bring the beans to boil in a large pot of water for 10 minutes then simmer for 1 - 1 1/2 hours, until soft.
Meanwhile sauté your onion slowly for 15 minutes in plenty of olive oil. Don't use all of the oil, save some of it for later.
Add minced garlic to the onion and continue to fry lightly for another 5 minutes. Add more olive oil, if necessary, but do not let the garlic burn.
Add tomatoes, stock, dill, salt and pepper and the rest of the olive oil to your sauce.
Simmer for 10 to 15 minutes. While simmering, preheat oven to 375 F.
Drain the beans and transfer together with the sauce to a Pyrex (or other oven safe) dish. Cover with tin foil and bake for 25 minutes. Remove foil and bake for 15 more minutes.

Additional Notes

If you don't have dill, you can use Greek rigani or Italian oregano.
