Gluten-Free Upside Down Apple Ginger Pandowdy
 

Ingredients

6 med. apples, peeled and cut into cubes
4 tbsp. cinnamon
1/4 cup dark agave nectar
1 box gluten-free ginger snap cookies
1/4 cup lemon juice
1 4 oz. container of crème fraiche or whipped cream (optional)

This gluten-free version of the popular apple pandowdy features a ginger crust, seasoned apples and a topping of either crème fraiche or whipped cream.

Directions

Preheat oven to 420 degrees.
Mix apples, cinnamon and dark agave nectar together in small bowl.
Heat apple mixture in microwave approximately 3-4 minutes.
Blend all but about a 1/4 cup of the ginger cookies and lemon juice together in blender, grinder or food processor until a dougy consistency is formed.
Spoon the cookie mixture into a pregreased pie plate and shape into a pie crust.
Allow the pie crust to dry approximately 10-15 minutes.
Add the apple mixture to the pie crust.
Top with remaining dry cookie crumbs.
Bake for 15 minutes or until top is golden brown.
When plating, turn over onto plate so bottom is on top.
If desired top with creme fresche or whipped topping.
Serve warm and enjoy.
